    This oil is characterized by a balanced fruitiness with slightly increased bitterness and more pronounced pungency, making it particularly appealing to lovers of spicy food and Asian cuisine. From the very first taste, a mild flavor stands out, gradually developing into a clear but pleasant bitterness and lasting pungency, with a final note of chili peppers.

    It is obtained from olives grown at higher altitudes, where the trees are naturally exposed to stress. These conditions encourage the olive to produce valuable natural compounds that protect it from pests. These compounds give the oil its characteristic bitterness and pungency, have a beneficial effect on the human body, and are one of the reasons for the olive’s exceptional longevity.

    Krvavica, although an autochthonous Dalmatian variety, has never held a cult status among Dalmatians due to its more pronounced pungency and bitterness, as they traditionally preferred milder oils. For this reason, its oil was long less common and somewhat overlooked.

    However, in recent years, Krvavica has experienced a true revival and is increasingly appearing on gourmet tables. Adding this oil to meat dishes imparts pronounced peppery and chili notes, elevating the dish to a higher level and opening the way for modern, bolder gastronomy.
